Tagaytay Favorites: CE’ Tapas Bar

With a number of novelty restaurants opening in Tagaytay, there are more reasons for people to drive out of Manila to, aside from viewing the volatile Taal Volcano. One of these new restaurants is CE’ Tapas Bar, a Spanish dining place that opened on June 16.


Set within the verdant compound of Carmelence Place by Cerilo’s, a boutique hotel along the main road of Tagaytay, CE’ Tapas Bar offers a variety of Spanish dishes, exquisitely rendered by its creative Executive Chef Noah Ranola. 


Chef Noah, a passionate chef who never ceases to bring out his best in every dish he creates, crafts traditional Spanish delicacies touched with his provenly favored style and taste. His keenness to details, consistency in harmonizing diverse flavors and his outpour of love for cooking and for creating sense-pleasurable dishes are all reflected on his menu.


Such that, at the first glance of raw tuna laid on a dollop of salsa in a shell-shaped tortilla in Tuna Tostadas can instantly ignite seaside memories while sipping freshly concocted sangria, or that the palatable servings of Jamon de Croquetas and Gambas al Ajillo can spark a craving for gin tonic and a memorable feast to come along.



Yet, in the midst of its plush mid-century design, and countryside cosmopolitan vibe, diners would want to stay longer, indulging in mains, like Lengua, Callos and Paella Negra, while engaging with CE Tapas Bar’s owner, Chef Cerilo “Cy” Catalan, who was inspired to bring his memorable Spanish gastronomic experiences into Tagaytay.


While Chef Noah’s menu changes regularly, diners would have something new to return to in this famous ridgeview town. But when it comes to dessert, having a piece of Basque Burnt Cheesecake over a cup of their original coffee blend, is certainly a wonderful pair that is not to be missed.


The key ingredient of CE Tapas Bar’s harmonious flavors is the dynamic teamwork of its prime movers, Chef Noah, Chef Cy and Chief Operating Officer and longtime F&B corporate executive, Emil Manalo, who altogether, under Cerilo’s Catering Services (CCS), have been reaping impressive feedbacks about their food catering at the Singapore Airlines airport lounge in NAIA 3.


It is without a doubt, their respect for one another, diligence in each one’s roles, reliability in executing each one’s task with excellence, finding joy and appreciation in one another’s diverse personalities and in their common embodiment of self-worth that emanate in every piece of their offering and in the refreshing breeze flowing in and around CE Tapas Bistro.


Consequently, it is in heartwarming places like CE’ Tapas Bistro that make Tagaytay City a weekend destination to come home to.
