Homemade Gnocchi Ingredients:
1 pound of potatoes
1 cup flour
1 egg
Pinch of salt
Directions:
Scrub and clean the potatoes well but do not peel them yet.
In a pot, boil the potatoes until fork tender.
Once boiled, let it cool down until you can peel the potatoes by hand or with a peeler.
When all the potatoes are peeled pass it through a potato ricer or mash it really well until there are no lumps.
On a flat surface mix the flour and a pinch of salt together. Then create a well in the middle of the flour mixture.
In the well add the potato and egg and gently mix everything together until you have a dough.
When the dough no longer sticks to your fingers, start rolling out the dough into ropes.
Cut the ropes into bite size pieces.
Use the back of the fork to slide the bite size pieces on in order to get the ridges on the gnocchi. Once done with every piece lightly dust some flour over it to avoid the gnocchi sticking together.
Sheet Pan Ingredients:
1 lemon
3 cloves of garlic
1 large eggplant
Cherry tomatoes
2 zucchinis
Green beans
Basil
Chorizo
Gnocchi
Olive oil
Paprika
Oregano
Salt and pepper
Directions:
Chop up all the vegetables. Slice the tomatoes in half and cut your zucchinis and eggplant into bite size pieces. The green beans can be cut into half or left alone depending on the size. This is to make sure everything cooks evenly.
Finely mince the garlic and chop up the chorizo into small pieces.
On a baking sheet place all your sliced vegetables and garlic. Pour enough olive oil over the vegetables to make sure everything is evenly coated.
Add some oregano and paprika as well as salt and pepper to taste.
Mix everything together to make sure everything is evenly coated with the seasoning.
Place your baking sheet into the oven for about 20-25 minutes.
Once your vegetables are half cooked add in the gnocchi and toss it all together and then place back into the oven for another 10-15 minutes.
Once everything is done cooking you may add a squeeze of lemon juice and some finely chopped basil for garnish before serving.
Extras:
You may opt to switch out the vegetables if any of the ingredients are not available. Some great options are pumpkin, squash, carrots, capsicum, broccoli, chickpeas and many more. As long as the cooking time of the chosen vegetables are similar it will work with this recipe.
For the protein you can also switch out the chorizo for sliced up chicken breast, bacon, or some sliced italian sausage.
If you want some extra flavor or a different kind of garnish you can shred up some mozzarella or grate some parmesan cheese on top before serving.
For a little kick of heat you can sprinkle red pepper flakes for added spice.
If basil and oregano are not your favorite herbs or it’s not available, feel free to switch it out with parsley, rosemary, or whatever mixed herbs you have at home.
