Ingredients:
1 tablespoon chia seeds
3 cups of cold water
½ cup hot water
½ tablespoon of matcha powder
Lemon juice
Your choice of sweetener
Directions:
The first thing you need to do is soak the chia seeds in 1 cup of cold water. This will allow the chia seeds to gel and develop to the right consistency.
In hot water, add your matcha powder and your choice of sweetener. Mix together until the powder has dissolved. You may use a milk frother to speed up the process and develop a slight foam.
Add the lemon juice to the matcha mixture and mix together.
In a large glass, add the matcha mixture and chia seeds.
Top it off with cold water.
Slice some lemon wheels for garnish and serve.
Notes:
You may add ice to your drink to keep it cool or store it in the fridge if you decide to make a large batch.
You may use any kind of sweetener that you prefer such as sugar, honey, agave, or stevia. Just keep in mind that it may alter the taste.
The amount of lemon juice and sweetener used should be to your taste. You can taste test as you go along and adjust the sweet or sour flavor as needed.
Keep in mind that matcha powders can also alter the taste of the drink since some matcha powders can already be sweet to begin with. Make sure to double-check the label to assess if your matcha is unsweetened or not.
